Make Sunshine Salad:
Gold zucchini, gold beets, and rhubarb make bright salad fellows. Grate washed beets and zucchini over your favorite lettuce or leafy. String rhubarb and chop into bite-size pieces. Top with juice of one orange and a splash of apple cider vinegar, plus seeds for crunch, if you like.
